- It's 1/2 of fresh red pepper.
- You need 1/2 tsp of crushed cumin.
- It's 1-2 of zucchini.
- You need 1/2 tsp of salt.
- Prepare 5 tbsp of frozen sweet corn.
- You need 5 of cherry tomatoes.
- It's 250 g of red beans (1 can).
- You need 4 tbsp of tomato sauce (puree).
- It's 1/2 tsp of salt.

- Prepare 2 tbsp of spring onion.

- Chop half onion and garlic and fry it on a small amount of oil. Add yellow and red bell pepper chopped in small cubes. Add cumin. When pepper is half-soft add zucchini cubes. Add salt and saute everything for 3 min with the lid on. Add frozen corn and cherry tomatoes cut into halves..
- Saute for another 5 min. Add red kidney bean and some tomato sauce. Mix everything so the vegetable will combine well. Once ready sprinkle it with chopped spring onion and some grated cheese (optional).
