Ingredients of Lobster and Cheese Ravioli
- Prepare 2 packages of Raña Maine Lobster and Cheese Ravioli.
- It's 1/2 of -Stick Butter.
- It's of 2-Tbl of Extra Virgin Olive Oil (EVOO).
- You need 1/4 of -cup of White Wine.
- Prepare 1-14 oz of can of Diced Roasted Tomatoes.
- Prepare 1 of -Tbl of minced garlic.
- You need 3 of -Scallions, sliced thin.
- You need 1 of -Tbl Dry Basil, normally I use fresh basil, but didn’t have any.
- It's of Salt & Pepper.
Lobster and Cheese Ravioli instructions
- Start sauce 1st. The pasta is fresh, so it only takes about 4-min to cook..
- On medium heat, melt butter and add EVOO.
- Once melted, add garlic, basil, 1/2- of scallions, and 2-pinches each of S & P. Bring to a Simmer for about 2-minutes.
- Add wine and tomatoes, continue to simmer.
- In a large bring salted water to boil, then add Ravioli, cook for 4-min. Reserve about 3-Tbl of pasta water.
- Strain the pasta, do not rinse.
- Add reserved pasta water to sauce. Simmer for about another 2-minutes.
- Add Ravioli to sauce, plate, and garnish with remaining Scallions.
