- You need 1 of medium sweet potato.
- You need 3 Tbs of fresh grated ginger.
- It's 1 lb of brussel sprouts.
- Prepare 1 lb of steam-in bag mixed broccoli, cauliflower & carrots.
- You need 1 of large onion.
- It's 1/2 lb of sliced mushrooms.
- You need 4 Tbs of tahini.
- Prepare 2 Tbs of soy aminos.
- You need 1 clove of garlic, minced.
Tahini Veggies instructions
- Peel and small dice sweet potato.
- Add about an inch of water into deep skillet.
- Add sweet potato and simmer until almost fork tender.
- Add ginger and finish simmering.
- Set potato aside.
- While potato simmers, microwave steam-in bags of veggies as directed.
- Set bags aside.
- In same deep skillet, over medium heat, add sliced onion.
- Cook until soft.
- Add mushrooms and cook until done.
- While mushrooms cook, in small bowl add tahini, aminos and whisk.
- Add water to sauce, just enough to thin as desired.
- When mushrooms are cooked, add bagged baggies and potato and sauce.
- Stir and simmer a few minutes until sauce is incorporated.
